Ingredients (serves 2)
5 fresh eggs from your own hens
40g (1½oz) cheese and onion crisps - the thicker the better
A splash of oil or a knob of butter
3-5 fresh sage leaves, cut into ribbons
Method
1. Beat the eggs with a balloon whisk until combined and frothy, add the crisps - making sure not to crush them - and leave to soak for 60 seconds.
2. Place a large non-stick frying pan over a medium heat and add the oil or butter. Sprinkle the sage onto the pan and allow the flavour the oil or butter.
3. Pour the egg mixture into the pan and gently stir to distribute your crisps evenly.
4. After about a minute, use a spatula to loosen the Omle from the sides of the pan and lift on side over the other. Cook for another 30 seconds and slide out onto a plate. Enjoy immediately with a green salad.
